-- Testarossa’s Special Syrah Winemaking Techniques
It all starts in the vineyard where our winemaker, Bill Brosseau, works with our growers to produce rich, flavorful, and healthy grapes. All of the fruit is carefully hand sorted, and a gravity flow process is used throughout fermentation. For Syrah, we do an extended pre-fermentation coldsoak, and different from Pinot Noir, our winemaking team utilizes a combination of traditional punch downs mixed with more oxygenating pump-overs which are critical for this varietal.

-- Why is the Sleepy Hollow Vineyard special?
The Sleepy Hollow Vineyard, planted in 1973 in what is now known as the Santa Lucia Highlands Appellation of Monterey County boasts some of the oldest Pinot Noir and Chardonnay vines in North America. The gentle east-facing slope of the vineyard is covered with Pacific Ocean fog every morning, leading to a very long growing season. Owned by Robert Talbott, these low yielding vines receive exceptional care.

--What is Testarossa’s Palazzio Pinot Noir?
The name Testarossa (Italian for “red-head”) was Rob’s nickname while a University student in Assisi, Italy almost 20 years ago. We named our fl agship Pinot Noir “Palazzio” (a derivation of the Italian word for “Palace”) to continue the theme we started with our Castello (“Castle”) Chardonnay.

No need to venture up into the mountains to taste your favorite local wines anymore. We're in the swing of things with our Tasting Room Tuesdays at California Cafe!

Join us on Tuesdays, from 5-7pm, to indulge in wine tastings featuring a local winery, weekly. Meet winery representatives (and sometimes the winemakers) as they pour wine, while you enjoy Chef Taylor's delectable appetizers! $15 per person, and $10 will be applied to your check if you stay for dinner. If you can't make it Tuesday, tastings are offered daily in the lounge!
