The Georis Winery began in 1981, the inspiration of Walter Georis and his brother Gaston of the Casanova Restaurant in Carmel-by-the-Sea. A unique brotherhood of music, good food and spirits, this winery has become a mecca for foodies and good wines in the Carmel Valley.
Well known for their "Estate Melot" and Cabernet Sauvignon and superior quality, their wines reflect a St. Emilion and Pomerol influence and are aged 18 months in Bordeaux chateau barrels and held for another year in bottles prior to release.
Their dark, ruby red color and esters of vanilla, chocolate and violets are stunning and extremely elegant, drinkable at release as well as aging twenty years.
The philosophy of this wine maker has alot to do with their flavor and success. Grown in the upper region of Carmel Valley - 20 miles from the Pacific Ocean, the winyard is limited to 28 acres of Merlot and Cab grapes. Most sandy clay with gravel and river rocks with some chalky soils produce the grapes that are harvested in October. Planted and spaced far apart, the vineyards are sure to bring fruit which has the character and quality necessary to produce these world class wines.
