Dosas are a vegetarian specialty of South Indian cuisine, but just because they’re vegetarian doesn’t mean they’re unsubstantial. Spicy, savoy and sometimes a little sweet, dosas make for a surprisingly hearty meal. Here are five of our favorites.

My favorite is the spicy vegetable masala dosa. The variety of vegetables (cauliflower, peas, onions, potatoes) is hearty and filling and the moderate chile pepper heat enlivens what would be a rather bland mass of crepes and vegetables.
